Vegetarian Quiche
Quiche are one of the easiest things to make. Have extra veg laying around? Some getting a little soft? Small bits leftover? Consider all the lovely taste combinations. I had fresh spinach, part of a red bell pepper, and tomatoes going soft (remove the seeds).
I finely diced a sweet onion and sauteed that til browned. Then I added a bit of lactose free milk (no more than a cup for two quiche) and continued to cook. I added salt, lots of pepper, some dry thyme, and some Italian spice blend. Let the herbs compliment the veg selected. Simmer for 5 minutes stirring often infusing the flavors. I removed it from the heat and after about 5 minutes I quickly stirred in 4-6 whisked eggs, 6-8 if making two quiche bases. Go short if you are not sure about how many eggs to use. You can easily fold in an extra whisked egg to a pie if it seems to come up short against the depth of your pie pan. It will vary based on everything you add. Sorry, but I generally cook by feel unless I'm baking a cake.
I had ready made frozen pie crusts which I had pricked and warmed about 5-10 minutes in a preheating oven. I layered in some veg across the bottom of the crust. Then I poured some egg, onion, spice, and milk mix across that. I repeated another layer of veg and topped again with more egg mix. I baked it about 40 minutes in a 350F oven. Removed from the oven when firm. In about 15 minutes it set up and I sliced it.
I made enough of the egg, milk, onion base for two pies. My second quiche was a combination of small cubed Swiss, spinach, and vegetarian sausages. Prepared the sausage according to instructions. Chopped into bite size pieces. This is also layered. Veg, Egg Onion mix, veg, Egg Onion Mix.
If using real meat, always precook the meat. Consider adding the meat to the onion before the milk is added. This will ensure the meat reaches a safe temperature.
Ready made crusts are easy but home made crusts only require some time, a rolling pin, and a willingness to piece together a crust when it doesn't quite go as smoothly as the youtubers make it seem.
BTW, if making your own crust, you'll probably have leftover dough. Roll it out, slather with melted butter, and top with a cinnamon sugar mix for a sweet treat. Slice into shapes with a knife or cookie cutters. Put on a no stick baking sheet in a 350F oven for 5-15 minutes until crisp.
