Homemade Biscuits



Ridiculously Easy Biscuits

Oven 450F

1 TBSP lemon juice plus enough whole milk to equal 1 CUP total.
Put milk-lemon mix in freezer and set timer for 10 minutes.

Melt 1 stick of salted butter in the microwave. Set aside.

In a large mixing bowl combine
2 CUPS All purpose flour, plus more for kneading
1 TBSP Sugar
1/2 TSP Baking Soda
2 TSP Baking Powder
3/4 TSP Table salt

Remove milk lemon mix from freezer after 10 minutes and stir in the stick of melted butter.
Mix well. It will be lumpy. (This step replaces the old fashioned technique of cutting the butter into the flour. It's much easier this way.)
Next, pour butter/milk/lemon mixture into the dry mix.
Stir well. It will be lumpy. Your goal is to leave no dry flour. It will be a wet, sticky mess.

For the next step I use a large pizza pan for easy clean up.
Generously flour the surface (pizza pan). Turn wet dough mixture onto the pan then generously sprinkle flour on top of the dough.
Flour your hands and gently gather the dough together and knead it no more than a half dozen times. You want it coated in flour so it's much less sticky but it only needs a small amount of kneading. Too much handling with reduce the rise.
Flatten to about an inch in height and use a floured cutter to cut out the biscuits.

Place the biscuits on a large baking sheet lined with parchment paper. Don't bunch all together but some may touch if you want softer sides.  I group in sets of four usually. It'll make 8-12 biscuits based on your cutter size. They take 8-14 minutes based on size so keep an eye on them. You want a lightly browned top.
