Bread from scratch
I've been making bread for over 24 years but always with a recipe. I finally ventured into the unknown today and make my own bread by feel. It turned out and it's really good.
1 1/4 cup rye, 2 cups white, bit of dry coffee, bit of dark cocoa powder, tossed in caraway seed and a little bit of fennel seed, added 1 1/2 tsp salt, 1 tbsp sugar, 1 1/2 tsp yeast and 13 ounces warm water. Stirred together. Let rise about 3 hours. Turned out onto floured surface and added enough rye flour to reduce the stickiness. Let rise another 2 hours. 450F for 30 minutes in a covered dutch oven/ Removed the lid and cooked another 8 minutes. Yum!
