Homemade Oat Bread

Look how high the bread rose!

OAT BREAD

In a deep bowl, mix together

16 OZ cool WATER
1 ½ TSP SALT
¼ TSP YEAST
1 TBSP HONEY

Add 3 ½ CUPS BREAD FLOUR
Stir a bit until it is slightly damp.
Then add 1 CUP OLD FASHIONED OATS
Mix together well making certain to gather all the oats into the dough ball.

Cover the bowl with saran wrap.
Let rest overnight.
Gather the dough together into a ball.
This is easily done by inserting the thin handle end of a large wooden spoon into the dough and turning it in a circular motion until it quickly gathers into a ball of dough.

Add ¼ CUP of OLD FASHIONED OATS to the outside of the dough ball turning gently to cover the surface.

Place dough into a 9 x 5 bread pan that has been sprayed.

Preheat the oven to 400F and lower the rack to the lower third.

Let rise about 30 minutes until the bread rises to form a crest above the pan.

Bake 40 minutes at 400F.

Remove immediately from pan and cool on a rack.
