Red Cabbage Soup

 



Made it up as I went Red Cabbage Soup

Sautéed  an onion. 
Added in 3 stalks of sliced celery. 
1 1/2 TBSP minced garlic
Half a small red cabbage sliced.
Green cabbage is fine. The taste is similar.
The difference is the purple color bleeds throughout leaving a darker broth.

1 sliced carrot
1 TSP Poultry-like seasoning
2 Bay leaves
Handful of chopped parsley
A cup of soy chicken 
Enough water to cover it all
Cook until carrots are cooked

3 Cups diced potatoes
1 TSP black pepper

Once potatoes are half cooked, add veg or chicken bouillon to taste. 
Cook until potatoes are cooked through.
Remove bay leaves.

Add salt if needed

Serve as is or with a splash of milk or with a dollop of sour cream
