Quick-ish rolls

Cooking before the cold sets in too much. 20F/15 WC at 5pm. 10 F/ -5WC by 5 am. We'll be luckier than most of the US. Neighboring town reporting some outages because of wind taking down trees.

Made spiced lentil carrot stew: onion, ginger, garlic, cinnamon, cumin, allspice, red pepper flakes, parsley, tomatoes, stock, and salt.

Modified my quick bread to make rolls. Worked really well! 

3 c. bread flour + 1.5 tsp salt + 2 tsp regular yeast + 1.75 c. hottest tap water. Mix into dough ball. Cover. Rest 1.5 hours. 

Deflate the dough & create a dough ball. Turn onto a floured surface. Cut into 8 sections. Gently gather together each section into a ball. Place on a large baking sheet lined with parchment paper. 

Rest 15 minutes and turn oven to 450F. Put rack mid height in the stove. 

Rest another 20-30 minutes. Brush with melted butter and sprinkle with sea salt. 

Bake 15 minutes in the preheated 450F oven.
