Prepping for changes
I made a pot of my white bean soup today.
Prepping for some big changes around the homestead. Taking a few days to decompress and adjust to a new schedule. Avoiding chores like the grocery means using what's on hand.
A pot of White Bean Soup loaded with onions, celery, carrots, tomatoes, thyme, olive oil, parsley, salt, pepper, cannellini beans (white kidney beans), and lemon juice. Did I forget anything?
A quiche, dairy and meat free, trying to escape the pan in the photo below. Clearing the freezer I used the last of the holiday bought frozen crusts and a box of soy sausage. Eggs, onions, spice, and spinach mixed with eggs and sausages to complete this improvised quiche.
Peter found a can of evaporated milk nearing its expiry date and canned pumpkin too. The other crust was used for the pumpkin pie which tastes just as great on this second day of spring.
Today is Lance's last day working in Duluth. Nine years ago he was forced to transfer from Athens. A quarter of a million miles for the two of us. Three cars later. One car totaled at 65mph when Lance had a seizure. (Months of driving restrictions post-seizures. Driving him in to work after his seizures meant a 250 mile nightly trip for me.)
Numerous crises and nine long years later we are both anxiously awaiting his return to work in Athens on Sunday. He's taking the next few days off to adjust his anti-seizure meds and his sleep schedule. Hopefully these foods will be the start to a relaxing few days.
