Roasted Garlic Bread

I used my standard 1-2-3 Quick bread recipe using the basic recipe and standard boule option for shaping. I roasted garlic in the oven as the dough rose for an hour.

Remove most of the paper thin skin from a head of garlic leaving the head intact. Slice sideways across the top of the head removing most of the top tips of the cloves. Place the head and the sliced tips in an oven safe crock. Drizzle olive oil across the sliced top and add a little oil into the pot. Add 1-3 TBSP of water to the pot. Cover and roast for about half an hour at 425F. Remove the cover and continue to roast until the head of garlic is nicely browned. Let cool and squeeze the cloves from the head.
Fold the garlic into the dough after it is turned out onto a floured surface, shape the loaf, and poke any garlic sticking out into the dough.
Let rise 45 minutes and bake in a preheated Dutch oven at 450F for 30 minutes whilst covered. Then remove the cover and bake another 10-15 minutes until the crust is nicely browned.
