Ramen has become comfort food

 

Ramen in my favorite bowl, a chipped old crock that handles the heat.

Lately I haven't felt like eating much, usually one meal a day. And the past few days I have defaulted to a hot bowl of ramen. I've been sautéing finely diced onion in sesame oil, tossing in minced garlic, and a green onion or two. Some days I'll slice some mushrooms or a handful of chopped cabbage. I brown it nicely, add a touch of soy sauce, rice vinegar, and a squirt of hoisin sauce. Occasionally I'll use a bit of a chili ramen packet, not much, or some Sriracha style sauce. Todays batch was tossed into a sauté pan and everything was nicely browned. Then I added in 1.5 cups of water, deglazing the pan as needed. I crumbled up a packet of ramen and cooked it for 3 minutes. Cheap, cozy comfort food for dark days.
